It's not "just" 360 pixels missing, it's closer to 1 million pixels. 720p has a pixel resolution of around 1 million pixels, while 1080p has a resolution of around 2 million. You're losing half the details dropping to 720p from 1080p.

1080p also known as ‘Full HD’ is a progressive scan comprised of 1080 horizontal lines of pixels and 1920 vertical lines. As the picture is progressively scanned there are no reductions in picture quality due to the interlacing of picture frames and it offer a far greater picture clarity than that of 720p. I am mainly curious if you have tried tinkering with a 720p output vs a 1080p output and seeing what looks better. PC monitors are known to be bad at upscaling, so I am thinking the 720p output may be better since it's a direct 2:1 ratio for the upscale.
